Ingredients

Topping

  • 1 large russet potato
  • 1/2 head cauliflower
  • 2 tbsp butter of choice
  • 1/4c milk of choice
  • 1/4c cheese of choice (optional)
  • salt + pepper to taste Filling
  • 1 pack Mushroom Crumble
  • 1 pack Cauli Crumble
  • 1 tbsp oil
  • 1/2 cup veggie broth
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1 tbsp corn starch
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • salt + pepper to taste

1.Preheat oven to 350F. 2. Peel then chop potato into cubes. Chop cauliflower into florets. Steam potato and cauliflower until fork tender. 2. Mash cooked potato and cauliflower with butter and milk until smooth. Stir in cheese, salt, and pepper. 3. In a large baking dish, combine all filling ingredients. Top with potato mixture and a sprinkle more of cheese. Bake for 30 minute until slightly golden.
