Ingredients

  • 1 loaf day old Sourdough Bread approx. 500g
  • 1 package Big Mountain Soy-Free Tofu
  • 2 tbsp Flax Meal
  • 2 tbsp Chickpea Flour
  • ⅛ tsp Salt
  • 1 tsp Cinnamon
  • ¼ tsp Vanilla Bean Paste (½ tsp extract)
  • ¼ tsp Apple Cider Vinegar
  • ¼ tsp Nutmeg
  • 3 tbsp Maple syrup
  • 1 cup Coconut Milk
  • ⅛ tsp Turmeric (optional - for colour)
  • 2 Superfood Brekkie Links, sliced on an angle
  • ½ cup Blackberries

Recipe Preparation

  1. Lightly grease a deep baking dish with coconut oil and slice the bread into thick slices.
  2. To make the french toast batter, add everything except for the brekkie links and blackberries to a blender, blend well until you get a smooth and pourable batter. Transfer around half of the batter into a wide deep dish (big enough to dip the slices of bread in) and set the rest aside.
  3. Individually dip each slice of bread into the batter, then arrange the slices in the greased baking dish so that they overlap slightly.
  4. Take the sliced brekkie links and blackberries and tuck them between the slices. Next take the rest of the batter and pour it over top. Cover the dish with aluminum foil or plas- tic wrap and place it in the refrigerator for at least 1 hour or overnight.
  5. Preheat the oven to 375.
  6. Bake for 35-40 minutes or until the bread is golden brown.
  7. Serve with a drizzle of maple syrup.
