  • 1/2c tapioca pearls
  • 5c water
  • 1/2c brown sugar
  • 2tsp vanilla extract
  • 1/4c water
  • TAHO
  • 2tbsp toasted coconut
  • 1 pack Big Mountain Soy-Free Tofu cut into planks

Recipe Preparation

  1. In a medium sized pot add 5 cups of water. Bring to a boil over a high heat.
  2. Add tapioca pearls and reduce to a medium high heat. Once tapioca pearls are floating, cover with a lid and simmer for 2 minutes. Remove from heat and let set for 2 minutes. Strain tapioca and place in cold water. Rest for 20mins.
  3. In a medium pan, add brown sugar and remaining water. Bring to a simmer over a medium low heat. Add tapioca and cook for 2 minutes.
  4. Remove from heat and store in heat proof container. Chill in fridge until cooled. Roughly 10 minutes.
  5. In a serving bowl, line tofu on the bottom. Pour cooled tapioca and syrup over tofu. Top with Toasted coconut. Serve chilled.
