Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3-4 stalks of celery, chopped (approx. 1 cup)
  • 2-3 carrots, chopped (approx. 1/2 cup)
  • 1 medium apple, diced (optional)
  • 2 Mama Mia Veggie Links, chopped
  • 2 tablespoons fresh sage, diced
  • 1 tablespoon fresh rosemary, diced
  • 1/2 tablespoon fresh thyme,diced
  • 3 cups of bread cubes
  • 2 tablespoons chickpea flour
  • 4 tablespoons water
  • 1 tablespoon parsley, diced
  • 1 cup vegetable stock
  • Black pepper
  • Salt to taste

Recipe preparation

  1. Preheat the oven to 350.
  2. In a bowl prepare the chickpea mixture by whisking the chickpea flour and water together then stir in the fresh parsley. Set this aside.
  3. Add olive oil to a skillet over medium high heat then add the onion, celery, carrot, and apple (if using), give them a sprinkle of salt and pepper and saute for 3-5 minutes. Next add the Mama Mia veggie links and the fresh herbs then cook for 3-5 minutes.
  4. Toss in the bread cubes and stir everything together then pour the chickpea mixture over top. Give it another stir to make sure everything is coated then add the vegetable stock and gently toss. Taste and adjust seasoning if needed.
  5. Place the skillet in the oven and bake for 20-22 minutes. If your pan is not oven proof then pour everything into an oven safe baking dish and bake.
