Garden Veggie Sandwich
- 4 Original Veggie Patty
- slices of your favorite bread (gluten-free if desired)
- 1 large avocado
- 2 roma tomato
- 1 Red onion
- 1 Cucumber
- 2 cups baby spinach
- Favorite hummus or mustard (spicy brown, Dijon, etc.)
- alfalfa/clover sprouts
- Toast your bread.
- Slice tomato, cucumber, and onion.
- With a fork, mash avocado on one slice of toasted bread.
- On the other slice, spread mustard (or hummus).
- Layer up your veggies between the two slices, place halves together, and enjoy!
