Healthy Brocci-Soba
Ingredients
  • 1 julienned carrot
  • ½ julienned red bell pepper
  • ½ julienned red onion
  • 1 and ½ cups shredded cabbage (100 g)
  • ½ cup mushrooms
  • 4 ounces buckwheat noodles (125 g)
  • 1 pack broccoli crumble
  • For the sauce:
  • 2 tbsp coconut snaps
  • 2 tbsp tomato paste
  • 2 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • ¼ tsp ground black pepper
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ⅛ tsp ginger powder
Instructions
  1. Steam or pan fry the veggies (covered) for about 5 to 10 minutes.
  2. Cook the noodles according to package directions. Drain, rinse and set aside.
  3. Sauté the broccoli crumble with veggies in the pan for about 5-7 minutes. Set aside.
  4. To make the sauce just mix all the ingredients until well combined.
  5. Add the noodles to the pan. Stir and cook for 1 to 2 minutes over medium-high heat.
  6. Add sesame seeds
