Big Brat Veggie Links & Roasted Brussels Sprouts

10 min prep - 35 min cook time I love Brussels sprouts, said no child ever! But isn’t it funny that now we can’t get enough of this veggie? When we roast these miniature cabbage-like buds in the oven, they turn out crunchy and so delicious. And when you combine it with our Big Brat Veggie Link you have a side dish or main that you and your family can have any night of the week. You are going to love how simple this is. Trust me on this one!

The Big Brat Veggie Link Skillet
 
Ingredients
  • 1 Package of Big Brat Veggie Links
  • 2 Pounds of Brussels Sprouts
  • ½ Medium Onion
  • 1 Lemon
  • ⅓ Cup Olive Oil
  • ½ Cup Vegan Parmesan Cheese
  • Salt & Pepper
Instructions
  1. Preheat the oven to 400F.
  2. Wash and cut brussels sprouts in half placing them in a bowl or bag.
  3. Dice half the onion
  4. Squeeze in the lemon
  5. Adding the olive oil and toss.
  6. Place on a baking sheet
  7. Add Salt and Pepper
  8. Place in oven for 20 min
  9. Slice the Big Brat Veggie Links into 1 inch pieces
  10. min later… remove the brussels sprouts from the oven, give them a toss as you add in the chunks of Big Brat Veggie links.
  11. Sprinkle some vegan parmesan and then back in the oven!
  12. Bake another 10-15 min or until you’ve achieved the browning and crispness you like.
  13. Serve these warm, and ENJOY!
